I've never made tamale pie before but si...Heh. I've never made tamale pie before but since I love cornbread, I figure I can't go wrong with it.<br /><br />We made the baigan bharta tonight. I loved it! Jon only liked it--it was too mushy/homogenous for him. I can't complain, though, since he does eat vegetarian with me several times a week and will eat almost any dish with beans. :)<br /><br />As for the peach crisp, I don't really follow a recipe: just mix softened butter into a mix of brown sugar, oats, a little gluten free flour mix, cinnamon, and a pinch of salt. Top the cut up fruit with it and bake at 375F until bubbly and browned on the top.
